1 tin of sevruga caviar - keep refrigerated over ice (on-line caviar purchase).
3 nice bintge potatoes
Premium virgin olive oil
Peel the potatoes and cut them into slices, not too thin. Fry the slices with peanut oil until golden, and then salt them.
Fill half of a small and deep frying pan with olive oil and heat it up to 191 °C (the hot oil must not smoke). Then add the egg whites in the oil. When they start to bend, add the yolks in the middle. Then add some hot oil on top of it, without completely covering the yolks. Once the eggs are nicely cooked, remove them from the oil with a skimmer and make sure they don't stick to one another.
Serve on a plate on a bed of golden potatoes, then add a spoonful of caviar on top.
